Nick Mautone

Nick Mautone is a veteran hospitality professional with more than 40 years of experience. He founded Mautone Enterprises, a multifaceted food service, management and consulting company, in 2003.  Restaurant clients include The Carlton Hotel & Country, the Park Central Hotel and Il Buco in Noho.  Nick has consulted to Food Network on food service operations and to TV celebrity and author Rachael Ray.

In 2015, Mautone Enterprises was engaged by Tishman Speyer to reinvent the historic Rainbow Room. In 2016, after completing the turnaround of this historic business, Nick joined Tishman Speyer as Managing Director of Hospitality. Under his leadership, the Rainbow Room was reinvigorated as one of the top 25 highest grossing food service establishments in the world.

Prior to founding Mautone Enterprises, Nick was part of the teams at both Gramercy Tavern and Gotham Bar & Grill as part of the senior management teams, overseeing staff training, beverage programming and operations. Nick also served as general manager of the Hudson River Club in New York’s World Financial Center, overseeing day-to-day operations of the facility, inclusive of its in-house and off-premise catering business.

In addition to restaurants, Nick has worked with numerous beverage including Grey Goose (serving as a Brand Ambassador and On-Premise consultant). Nick has authored several books about cocktails and been a contributor to numerous publications writing about the industry at large, food, beverage and spirits. He has appeared as a guest on 50+ television shows and radio programs talking and educating about management, food, wine and spirits.  Nick is an acclaimed wine judge having participated in such prestigious competitions as the LA County Fair, Dallas Morning News Wine Competition and the NY Wine and Food Classic.  He has shared his knowledge by teaching classes at the Institute of Culinary Education and the International Culinary Institute. Nick has been a board member of the New York State Restaurant Association Manhattan Chapter and the New York Hospitality Alliance.
